Here's a great recipe for all those inshore (or offshore) tuna you've been catching. I came up with this one evening when I had no chance to prepare anything in advance and was short on time. It was great. Fast, easy and delicious!
Ingredients
Fresh Tuna Steaks
1 small red onion
2 Mangoes or a fruit cup or 2 or any combination
1/4 cup Balsamic vinegar
2 table spoons Honey
1 tablespoon fresh ginger or a teaspoon of dried
Cilantro (fresh or dry)
Old Bay
Salt
Pepper

Coat a few nice tuna steaks with a quality extra virgin olive oil. Dust this with dry spices to your liking. I used those mentioned above, old bay and a bit of salt & pepper. Leave this sit while you prepare the salsa.
Dice your mangoes into small cubes or drain your fruit cup (or any combination of the 2). Also dice about 1/2 of the onion & your ginger is you are using fresh. Combine all these ingredients in a small pot with the cilantro (coarsely chopped), honey, balsamic vinegar and let this simmer in a partially covered pot.
Back to the fish. Heat up a frying pan and add the tuna with the heat on high. Cover it to reduce smoking. After 5 minutes, turn the tuna and cook the other side for an additional 5 minutes. Continue to stir and watch your salsa while the fish is cooking. When the tuna is done, (10 minutes total) remove both the tuna and salsa form the heat. Put some greens in a plate, sprinkle with a quality balsamic vinegar, add your tuna steaks to the top and cover with a generous amount of the salsa & any cilantro left. Serve hot (although the tuna will probably still be cold in the inside).
I guarantee this is yet another great meal that you will want to make again and again.!
